Anise Hyssop
Agastache foeniculum
With a strong licorice scent and flavor, Anise
Hyssop is great for making tea or for adding to the spice jar. Strong
upright stems are topped with three- to six-inch spikes of lavender
blue flowers that attract hummingbirds, bees and butterflies. Self-sows
freely and can be a bit weedy, but allow at least some of the flowers
to go to seed because in the winter chickadees, sparrows and juncos
dine on the tiny black seeds. Useful for dried flower arrangements -
the individual florets are surrounded by a colorful calyx that
maintains its color when dried.
